Grilling isn’t only for hamburgers and hot dogs. When you’re a vegetarian or vegan, sometimes you need to get creative when it comes to summertime cookouts. You don’t need to be left out if you don’t eat meat… there’re plenty of meatless options to cook on your grill! Plus, even if you are a carnivore, these healthy and nutrient-filled ideas are great if you just want to add some extra veggies to your diet. If you’re vegan, just read the labels on all of the ingredients you use to ensure they fit your diet restrictions.
1.) Grilled Veggie Skewers
Use your imagination and add all different types of vegetables to your skewers. They can be seasoned with spices like paprika, oregano, parsley, or whatever you prefer. Veggie skewers can be served over rice, and you can even add some guacamole and beans. Here’s some ideas:
- Yellow squash
- Peppers (red, orange, yellow, green)
- Regular or sweet potatoes
- Artichoke hearts
- Sugar snap peas
- Brussels sprouts
- Raviolis (yes, you can grill these!)
Use dipping sauce for extra flavor like chipotle mayo, honey mustard, ranch, Greek yogurt, and more. A great vegan sauce option is avocado pesto, which can be made with a NutriBullet. Just blend the following:
- 2 cups of fresh basil
- ½ cup of pine nuts
- ½ cup of olive oil
- 1 slice of avocado
2.) Grilled Fruit Skewers
Grillin’ isn’t only for veggies though… you can also grill fruit! You can even add some mint leaves or coconut flakes on top. Here’s some ideas:
- Apples with cinnamon
3.) Veggie Burgers
When making a vegan or veggie burger, it doesn’t have to be plopped down onto a plate with nothing else… boring! Make it with the works, just as any other type of burger. For more options, use a large, grilled portobello mushroom, tofu, or tempeh as your burger.
You can prepare your burger as a sandwich, adding hummus for additional flavor. Add some mesclun greens, spinach, or arugula. Fresh vegetables like tomatoes, onions, and avocado are delicious on a veggie burger (don’t forget the pickles, too!) You can also add some cheese–goat cheese, fresh mozzarella, or vegan cheese are a good choices. Serve with regular or sweet potato fries as a side (SO good!)
4.) Wraps, Tacos, or Pitas
Fill up a wrap, tacos, or bowl with grilled veggies, rice, beans, and tofu. You can add chopped tomatoes, corn, lettuce, salsa, shredded mozzarella, and sour cream. If you’re looking for a vegan version, add vegan cheese and condiments.
Another option is grilled falafel, hummus, and grape leaves or veggies in a pita wrap.
5.) Veggie Pizza
Grill a homemade pizza! All you need is some dough, fuel for direct cooking, clean grates, and lots of great toppings. You can experiment with different types of cheeses like mozzarella, ricotta, Gorgonzola, feta, Gouda, or vegan cheese. Add delicious veggies like artichokes, zucchini, roasted red peppers, and more.
