Remember the sweet smells of the holidays permeating throughout your grandparents’ home as delicious treats were cooking on the stove? For many, holiday dishes can bring us back to some of our favorite childhood memories. Cinnamon, chestnuts, and peppermint are delicious ingredients and also happen to make the home smell like a winter wonderland!
With holiday-themed ingredients, this quick and easy-to-make recipe is just as tasty as it smells! It’s also the perfect side dish to serve during the season. Your guests will love all of the different spices and tastes, and it’s also a healthy choice! It’s a one-pot-stop recipe (aside from boiling some rice in an additional pot). So get your largest non-stick fry pan ready to go, and join us for some holiday fun…
- 4 cups of brown rice
- 1 yam (cut into cubes)
- 1 cup of dried cranberries
- 1 cup of bagged chestnuts
- 2/3 cup of peppermint leaves (chopped)
- 2/3 cup of chopped fennel or celery
- 2/3 cup of diced onion
- 1 tablespoon of cinnamon
- 1 tablespoon of allspice
- 1 teaspoon of nutmeg
- 1 teaspoon of ginger
- 1/4 cup of honey
- Salt & pepper to taste
- Olive oil
Preparation time: 30 minutes
Serving size: about 10 (one large bowl)
- Follow the directions on your box of rice, and boil four cups of rice in a large pot.
- Skin and cut the yam into small cubes. Chop the peppermint leaves, fennel (or celery), and onion into small pieces.
- Generously drench the bottom of your non-stick fry pan with olive oil, and turn the heat up to medium temperature. Add the yam, as this will take the longest to cook. Make sure the pieces have enough oil to remain moist at all times, otherwise they can easily dry out.
- As the yam cooks, add in the cinnamon, allspice, nutmeg, ginger, salt, and pepper. Let the yam soak in the flavors.
- Add the onions and fennel (or celery) to the mix and thoroughly stir them with the yam. Give them a few minutes to heat up, and they’ll soon start to look transparent.
- Mix everything together, allowing all the flavors to mix and mingle. Once the rice is boiled, drain the water into your sink, and pour the rice over the vegetables.
- Add in the dried cranberries, chestnuts, peppermint leaves, and honey. Mix the contents.
- Let the completed batch continue heating up on low heat for a few minutes. Serve in a decorative bowl… enjoy! (Add clementines or oranges in a separate dish for some extra holiday flair!)
